Happy Halloween From Pogo!

I tried to get a good picture of Pogo in his costume, but I couldn't get the "perfect pic" so you will get a variety of mediocre ones instead. He also hasn't been feeling well for the last week either :(

WW Week 37 Update!

I've gained a pound this week. I'm going to stick to points really strict and see if that makes a difference!

Two Recipes!

Today I made two new recipes! They were both really good so I'm going to share them with you!



Chicken Primavera
1 lb boneless skinless chicken breasts
1 bag frozen stir fry vegetables
1 container Philadelphia Cooking Creme Italian Herbs and Cheese flavor
8 oz Linguine, Cooked

Cut chicken into bite sized pieces and cook in a large nonstick skillet until cooked through.

Add vegetables and cook until tender.

Add Cooking Creme and mix, heat till bubbling.

Add Linguine and stir together. Enjoy!

We couldn't find the stir fry vegetables so we used a blend of broccoli, carrots, cauliflower, corn and red peppers. It was great though! To go with we made Cheesy Garlic Breadsticks.

Cheesy Garlic Breadsticks
1 Tbsp Active Dry Yeast
1 1/2 c Warm water
3 c flour
2 tbsp Sugar
1 1/2 tsp Salt
1/2 c melted butter
Garlic Salt
Dried Parsley
Shredded Parmesan Cheese


Dissolve yeast in water.

Add flour, sugar and salt and mix well. Let dough rise 30 minutes.

Heat oven to 375. Pour melted butter, parsley and garlic salt into a cookie sheet.

Roll dough into strips. Roll strips in butter mixture and bake 18-20 minutes.

Sprinkle sticks with cheese and bake another 2 minutes or until cheese is melted.

I thought the dough was too sticky and had to add a bit more flour, but they were really good!

Bar-B-Cups

I've recently tried a recipe that was super easy and super yummy! There are a couple of versions of this recipe floating around the internet that you a store-bought bbq sauce, my recipe did not. You definitely could use 1/2 c of a store sauce if you'd like but I found it just as easy this way.

Bar-B-Cups
1 pound ground beef or turkey
1 can refrigerated biscuit dough
1/2 c ketchup
2 tbsp brown sugar
1 tbsp apple cider vinegar
1/2 tsp chili powder
1 c shredded cheddar cheese

Preheat oven to 375 and spray muffin tins.

Cook ground beef until browned, drain off fat.

While beef is cooking mix ketchup, brown sugar, vinegar and chili powder. set aside.

Once beef is browned, add sauce mixture and heat until bubbling.

Flatten biscuit pieces and place one in each greased muffin cup.

Add 1/4 cup of meat mixture to each cup and top with cheese.

Bake 18-20 minutes until biscuits are browned and cheese is melted. Enjoy!!

WW Week 36 Update!

This week I didn't track, so I didn't expect much from the weigh in. I was pleasantly surprised when I lost 1 pound! YAY I've been stuck for the last month! Hopefully this is the break in my plateau!

WW Week 35 Update!

Again no change this week! Ugh it's beginning to get frustrating. It doesn't help that I have a horrible cough so exercising has been out. Hopefully I'll recover from my cough soon and get back to working out, that should jump start things!

Introducing...

POGO 

Pogo On Adoption Day!

Pogo became part of our household on Thursday, October 1. He is a 2 1/2 year old Chihuahua, he was previously named Peaches but we thought that was kind of a girly name for him and changed it to Pogo because he bounces like he's on a Pogo stick when you have something he wants (treats, toys etc). He already answers to his new name! A friend of my aunt was giving him away because she worked too much to spend the time with him he deserves. Taryn (my cousin and roommate) and I work at opposite times most of the time. During the instances he would have to be left alone it is only for a few hours. I was a little concerned about him having bad habits we would have to break, but he is a very good dog and we haven't had any major issues at all. He has had 2 accidents but he wasn't trained to let us know when he needs to go out. We are working on that and he's getting better. He doesn't get into things he shouldn't and only barks when somebody is at the door. He didn't even whine or bark during his first night with us (we are crate training him). He is a little nervous about meeting new people and will sometimes take awhile before warming up enough to allow them to pet him. I do think he is warming up to people quicker now, I'm not sure how much socialization he had before we got him. He's brightened up our home so much in the week since we've had him. Sometimes Taryn and I  just watch him and laugh because he's so funny and adorable. I'm sure he will get plenty of blog time!
